The matances — the traditional pig slaughter day — was one of the most important collective rituals of rural Ibizan society, bringing together families and neighbours in an act of shared labour, community bonds, and culinary craft that defined the island's identity for centuries. In this evening talk, Torres illuminates the social, cultural and gastronomic dimensions of the matances tradition, exploring how practices like making sobrasada, butifarra and other charcuterie products became both an art form and a cornerstone of Eivissa's living heritage.
